Welcome to an evening filled with authentic Thai flavors and carefully selected wines from Stefan Winter. Enjoy an exciting dining experience where each dish is paired with wine that highlights the flavors in the best way.


Stefan Winter x PIMAN

Stefan Winter is based in Dittelsheim in Rheinhessen and is known for precise, mineral Rieslings with great elegance and aging potential. The winery works organically and has received international recognition through high scores from Stuart Pigott and James Suckling, including Germany's first 100-point sector. The wines are characterized by chalky minerality, freshness and an impressive balance between power and finesse.


In the kitchen, Nuk is in charge, who creates the dishes for the evening with passion and respect for Thai traditions. With authentic flavors, modern elegance and carefully selected ingredients, he composes a menu that is specially adapted to the wines from Weingut Stefan Winter. The result is an evening where Thai food and wine meet in perfect harmony.

Compliments of the chef - คำต้อนรับจากเชฟ

Butter cake with tom yum cream and Norwegian prawns. Lemongrass, galangal and kaffir lime, arctic waters prawns, Thailand and Scandinavia, in a single bite.

Riesling Sekt Brut - Sparkling


Plah Salmon - พล่าแซลมอน

Fresh salmon with ginger, lemongrass and shoyu, bound by Thai lime dressing. Finished with trout roe, like rain on still water.

Stefan Winter Riesling Trocken


Gilded Tide  - ปูหลน

King Crab from Nordic waters, cradled in a crisp spring roll shell. Coconut milk, tamarind. Crowned with edible flowers and gold.

GG Kloppberg Riesling Trocken


Larb Dib - ลาบดิบ

Hand-cut strip loin, herbs and the ancient perfume of Makwaen, laid upon roasted bone marrow. Raw by tradition. Intentional by craft.

Dittelsheim Chardonnay 


Isaan Ember Beef - เนื้อย่างแจ่วมะเขือเทศ

Tenderloin kissed by charcoal. Roasted tomato jaew, crisp garlic and sticky rice. Isaan, at its most honest.

Weingut Winter Spatburgunder 


Sun-Kissed Mango - ข้าวเหนียวมะม่วง

Glutinous rice steeped in coconut milk, paired with mango at the peak of its sweetness — golden, fragrant.

What is a Winemaker's Dinner?

A Winemaker's Dinner is a dinner where good food and good wines are the focus. Throughout the evening, several courses are served, where each course is carefully paired with a wine that matches the food.

What makes the experience extra special is that the winemaker or a representative from the winery is present and tells about the wines, the vineyard and the work that goes into each bottle. You will hear the stories behind the wines, learn more about the grapes and the areas they come from, and discover how food and wine can lift each other.

This is a social and enjoyable evening for both wine enthusiasts and those who just want a good dining experience. No prior knowledge is necessary – just curiosity and the desire to enjoy an evening of good food, good wines and good company.
